You will need:

  • 2 chicken breasts, halved
  • Salt and pepper
  • 8 tbsp butter, softened
  • 1 tbsp mixed dried herbs
  • 4 tbsp Grumpy Gary's Gar-Lick dip
  • Flour
  • 2 eggs, beaten
  • Bread crumbs
  • Vegetable oil (for deep frying)


Method

  1. Flatten chicken halves, season with salt and pepper.
  2. Mix 8 tbsp softened butter with 1 tbsp herbs.
  3. Place 1 tbsp of this mixture on each chicken piece.
  4. Top with 1 tbsp Grumpy Gary's Gar-Lick dip.
  5. Fold and roll the chicken tightly, secure with toothpicks. (or roll in cling wrap and place in the fridge for 30 minutes)
  6. Dredge in flour, then dip in beaten eggs, and coat with bread crumbs.
  7. Preheat deep fryer to 175°C.
  8. Fry chicken rolls for 5-6 minutes until golden brown and fully cooked.
  9. Remove toothpicks before serving.
  10. Drain on paper towel, serve hot. Enjoy!
